Cafe Gratitude's Lemon Meringue Pie

Crust:2 1/4 cups macadamia nuts1/8 tsp saltFilling:2 1/4 oz. Irish Moss (soaked 12 hours)1 1/2 cups lemon juice1/4 cup agave nectarpinch of tumeric (for color)Garnish: half recipe of the I am on the Top Live Meringue (page 142)
In a food processor, process the nuts and salt to a dough-like consistency (do not over process). Press into a 9-inch pie pan.
For the filling:
blend Irish moss with lemon juice and tumeric until smooth and thick. Add agave and blend well. Pour into prepared crust and set in fridge for 30 minutes.
Top with the meringue.
