Ingredients
Directions
1 lb of Chicken breast or tenderloin, no skin.2 cans of black beans1 cup of brown rice 2 cups water1 can of sweet corn1 jar (16 oz) Salsa, I recommend Newman's Own Medium salsa.
Put rice and water in slow cooker. Add chicken, then salsa, black beans, and corn. Slow cook on high for an hour, and then cook on low for at least 3 hours. Or cook on low heat for a longer period of time. When done, pull apart the chicken breasts with a fork.
Consider adding a little cumin during the cooking process.
Optional serving suggestion: a dollop of sour cream or a 1/4c of cheddar cheese.
Makes 6-8 servings.
