Vegan Irish Stew/Vegan Pot Roast

Ingredients
Olive Oil, 1 tbsp Onions, 1 medium, dicedMinced Garlic, 2 tbspRed Skinned Potatoes, 5, cut in 8ths or so (half inch pieces)Baby Carrots, raw, 1 cup, cut in halfBeans, red kidney, 1 cupPeas, frozen, 1/2 cupBoca Ground Burger, 1 1/2 cupsVegetable Broth, 4 cupsSoy Sauce, 2 tbsp Rice Vinegar, 1 tbspParsley, Sage, Rosemary, Thyme, Salt and Pepper to taste
Directions
Saute the onions and garlic in the oil for about 5-10 minutes.

Put EVERYTHING in the slow cooker, and leave it on low for 8 hours.

Come home to a delicious, hearty, omnivore approved meal!
