Veggie Stuffed Mushrooms

Ingredients
-Fresh White Mushrooms, 1 package-1 T Olive Oil-2 Cloves Garlic-1 Small Onion-1 Stalk Celery-1/4 Red Bell Pepper-1 Carrot-2 T Fresh Parsley-2 T Parm Cheese, Grated-Water, as needed... about 1/2 C
Directions
Preheat oven to 350
-Clean mushroom caps with a damp paper towel
-Remove stems & mince... set aside
-Mince remaining vegies & saute over medium heat in olive oil until tender
-Add mushroom stems & saute
-Stir in Panko breadcrumbs & Parm cheese
-Add water until mixture holds together for stuffing
-Pile stuffing into each mushroom cap & place in baking dish
- Bake 350 until mushroom caps are tender... approx 20 min.
**Calories will vary depending on how many mushrooms come in package... usually 12-16 mushrooms.
