Mom's Potato Salad

Ingredients
12 cups diced and peeled potatoes4 large eggs1 1/4 cup finely chopped onion1 1/2 cups light mayonnaise1 cup sweet relish1 tbsp mustard1/2 tsp salt
Directions
In a small pot, boil eggs over medium-high heat for 15 minutes. Boil diced potatoes in a large pot until tender. When eggs are done, peel and dice.

In a large mixing bowl, place drained potatoes, diced eggs, onion, mayonnaise, relish, mustard, and salt. Stir until combined. Serve chilled.

Serving size is 1/2 cup.
