Vegan Cheddar Broccoli Soup

Ingredients
4 cups soymilk (i prefer 2 cups to be unsweetened)1 box silken lite tofu0.5 cup nutritonal yeastonion powergarlic powdertumericpepper2 tbsps vegan sour cream6 cups broccoli1.5-2 cups water1 cup vegetable broth
Directions
cut up broccoli into little pieces. Add the rest of ingredients to pot, excluding broccoli.
After a few minutes of simmering, add broccoli and cook until the broccoli is to your liking (10-20 mins).

    Yum! I did add an additional 1/4 c of nutritional yeast. I think this would be a fabulous base for a cream of potato soup as well. I would like it a bit thicker, so I may add less liquid or a touch of cornstarch to play with the consistency. Great recipe! - 5/11/10
