Rice Pudding

Ingredients
4 cups Lactaid Fat Free milk1/2 cup ricedash of salt4 eggs3/4 cup sugar1 tsp vanilla1/2 tea nutmeg
Directions
Cook milk, rice and salt in a double boiler at medium-low heat for 1 hour and 15 minutes, stirring occasionally. Mix eggs, sugar, vanilla and nutmeg. Remove milk and rice from heat and add eggs and sugar mixture. Stir while adding. Cook 10 minutes more. Makes 12 - 1/2 cup servings.
