Buckwheat Crepes

Ingredients
1 large egg1/2 cup milk2.5 TB water1/8 tsp salt1 TB unsalted butter, melted1/3 cup white flour (unbleached)1/3 cup buckwheat flour
Directions
Makes 5-6 10 inch crepes, or more smaller ones.

Put all ingredients in blender and blend 5-10 seconds. Refrigerate for at least two hours.

Cook in nonstick (crepe) pan over medium high heat. Use about 1/4 cup per 10" crepe. If you haven't cooked crepes, look up better instructions.
