Lower fat pork sausage gravy

Ingredients
1 lb. ground pork sausage3 TBS All-purpose white flour2 cups soy milk2 cups skim milk3 tsp. non-dairy creamersalt and pepper to taste
Directions
Fry ground pork sausage in large cast iron skillet or pot until thoroughly cooked--cooking times will vary. Add flour and stir constantly until flour has absorbed all fat. (We use home-grown pork so it is very lean and we do not need any more flour.) Add both soy and non-fat cow's milk, stirring constantly. Add salt and pepper and stir until thickened.
