Mexican Style Rice & Beans w/ Chicken

Ingredients
2 cups Dry Instant Brown Rice2.5 cups Water (to prepare rice)1 can diced tomatoes (reduced sodium).75 can Black Beans (reduced sodium) drained & rinsed.2 tbsp. Earth Balance Buttery Spread1.25 cups SalsaCorn cut from 1 ear2 Boneless, Skinless Chicken Breasts, broiled until cooked & browned slightly; dice up into bite sized pieces.1.5 oz. Reduced fat pepper jack cheese, shredded
Directions
Prepare the rice per package instructions & set aside.

In a cast iron pan, saute the black beans in the Earth Balance till heated through. Add the diced tomatoes and salsa & combine. Add the cooked rice & chicken and stir to combine.

Serve with the cheese on top.

** You can certainly make this without the chicken; I just added it because I wanted to make sure to fill my husbands belly!**
