Little Lemon Yogurt Puffs

Ingredients
1 egg1 egg white1/2 cup low-fat lemon yogurt1/3 cup sugar1 tsp vanillazest of 1 lemonjuice of 1/2 lemon2 tbsp olive oil1 1/4 cups flour1 tsp baking powder1/4 tsp baking soda
Directions
Preheat oven to 350F, grease 10 mini-muffin cups or line with paper liners.
In a bowl, beat together egg, egg white, yogurt, sugar, vanilla, lemon zest, lemon juice and olive oil. Set aside.
In another bowl, whisk together flour, baking powder and baking soda.
Add dry mixture to the wet ingredients, stirring quickly but gently just to combine.
Spoon into muffin cups.
Bake 12-15 minutes, until test done. Turn out immediately and cool on a rack.
