Clear Out the Fridge Vege Soup

Ingredients
2 T olive oil3 cloves garlic2 med onions1 leek1 med kumara (sweet potato)4 med stalks celery2 med potatoes2-3 cups stock (any kind)seasonings of your choice (I use mixed herbs, curry powder, cinnamon and plenty of salt and pepper)
Directions
Heat up olive oil in a large pot. Throw in all ingredients and stir fry until veges are not sticking to the bottom of the pot. Put lid on pot and "sweat" the veges, stirring occasionally. Once veges are nicely softened add in your stock and some extra boiling water (1-2 cups) and simmer on stove until soup has reduced into a beautiful broth. I then whizz it with a stick blender (be careful!!) but that is my preference you can leave it chunky:) Serve with wholegrain crusty bread perfect lunch yum!
