Oatmeal Carrot Raisin Cookies

Ingredients
1 c Splenda1 c unsalted Butter1 c Raisins1 c water2 eggs2 c whole wheat flour1 1/2 c quick oats1/4 tsp baking soda
Directions
Cream splenda and butter together cook raisins in the water until there is 5 tablespoons of water remaining. Rain raisins, reserving liquid, and cool completely.

Mix flour, soad, oats and raisins together. Add eggs and teh 5 tblsp water from the cooked raisins; mix well. Cover and put batter in refrigerator overnight.

whe read to bake, drop by heaping teaspoons on to creased cookie sheet. Bake approx. 13 min at 350*. Cook briefly, then move to a wire rack to cool completely before storing.
