Tomato, Leek and Onion soup

Ingredients
1/4 cup olive oil1.5 cups diced onions1.5 cups leeks, thinly sliced3 cloves garlic5 cups chicken broth2 can diced tomatoes2 Tbsp parsley1/2 tsp dried tarragon1 bay leafSalt
Directions
Heat oil in large skillet. Add onions, leeks, garlic; cook until beginning to brown.

In large saucepan or stockpot, combine sauteed vegetables with broth, tomatoes, parsley, tarragon, and bay leaf. Cover and simmer for 20 minutes. Discard bay leaf.

Season with salt if needed.
