Sauteed Salmon with Tomato Corn Relish

About 8 oz of Salmon (apprx 3 fillets)2 Cups Sweet Corn1/4 cup Onion (pref red)1/2 of a Red Bell Pepper cut into strips1 Medium Tomato, Halved and sliced1/4 Cup Alfalfa sprouts1 Tbsp dried parsley1 Tsp Dill Weed1 Tbsp or 1 clove garlic3 Tbsp Olive OilSalt/ Pepper to taste
Mix corn, tomato, pepper, alfalfa, onion, parsley, dill weed, garlic, and 2 Tbsp olive oil in a bowl. Set aside.
Heat 1 tbsp olive oil in a skillet. Place salmon in skillet and cook for 2-4 minutes on each side, sprinkling with salt/pepper. Plate salmon and stir fry relish for about 1 minute. Put relish on top of salmon. Enjoy.
