Peanut Butter Cookie

1/2 cup butter or margarin 1/2 cup creamy peanut butter1/2 tsp Baking Powder1/2 tsp Baking Soda1/2 cup Splenda1/4 cup honey or 1/2 cup brown sugar1/2 tsp vanilla1-1/2 cup flour1 egg
Beat butter and peanut butter with an electric mixer on medium tohigh speed for 30 seconds. Add the granulated sugar, honey, baking soda and baking powder. Beat until combined, scraping side of bowl. Beat in the egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in reemaining flour. If necessary, cover and chilll dough until easy to handle.
Preheat oven to 375 degrees F. Shape dough into 1-inch balls. Roll balls in additional granulated sugar to coat. Place balls 2 inches apart on al ungreased cookie sheet. Flatten by making criss-cross marks with the tines of a fork. Bake for 7 to 9 minutes or until bottoms are light brown. Transfer to wire rack to cool.
