Veggie Frittata

Ingredients
Olive Oil, 1 tbsp Egg, fresh, 3 jumbo Milk, nonfat, .25 cup Summer Squash, 1 cup, diced Onions, raw, .25 cup, chopped Mushrooms, canned, .25 cup Basil, 1 tbsp Fresh Chives, 1 tbsp chopped Pepper, black, 1 dash Salt, 1 dash Cheddar Cheese, .5 cup, shredded
Directions
Heat oil in skillet.
whisk eggs and milk, set aside
Heat oil in skillet, add onions, squash and mushrooms, saute until soft then add basil and chives. Remove from pan.
Add egg/milk mixture to pan and cook over medium heat, when eggs are almost set top with veggies. Sprinkle the cheese on top and place under the broiler until cheese melts
