Fried zuccini

Ingredients
4 slices zuccini about 1/2 in thick. 4 sl plum tomato 1/4 in thick 4 olives sliced egg & milk wash enough bread crumbs for coating (roughly 1/4 c after cooking) 1/2 oz mozz cheese 2 tb shredded parm cheese salt & pepper to taste slice veggies set aside. Mix egg/milk wash. Dip squash in milk and coat in cread crumbs. Heat oil to 325. cook squash til golden brown. about 3 min ea side. set aside on a broiling pan to drain. heat oven to 350. layer mozz, tomato, parm and olive on top of zuccinni. put in oven for 5-10 min to melt and lightly brown cheese. Salt & pepper to taste. makes 4 single ser.
