Thin German Pancakes

Ingredients
2 eggs2 cups flour, white (can use whole wheat)1 tbsp vanilla extract (optional)2 cups 1% milk
Directions
Use a medium size frying pan, spray non stick spray or 1 tsp smart balance oil, cook on 4-5 temp.Using a ladle spoon batter into middle of pan, then quickly spread out by holding the handle and swirling until the dough cover the bottom, when golden brown flip, golden brown , done.
Makes roughy 12 9" thin pancakes. (recipe does not include toppings, everyone puts whatever they like) syrup, jelly, I like 1 tsp sugar and 2 tbsp apple sauce (natural unsweetened) then roll up the pancake and enjoy.
