Introduction

This is a great and satisfying coffee cake for any time of day! This is a great and satisfying coffee cake for any time of day!
Number of Servings: 12

Ingredients

    2 cups white flour
    2/3 cups sugar
    2 tsp. baking powder or 1 tsp. baking soda
    2 eggs beaten
    1 tsp. vanilla
    nectarines or peaches or plums (six or whatever it takes to cover top of cake)
    3 tbsp. cinnamon sugar
    2/3 cup butter or margarine
    3 tbsp. butter melted for top of cake
    1 tsp. nutmeg


Directions

Mix dry ingredients together. Cut in 2/3 cup butter or margarine. Beat 2 eggs in 1 cup measure. Add 1 tsp. vanilla, fill to top with milk. Add to dry ingredients and mix well. Pour batter into 9 x 13" greased rectangular baking pan. Cut fruit in wedges and place on top of cake close together. I usually slant them left for 1 row then right, etc. Pour melted butter over fruit. Mix nutmeg and cinnamon sugar together. Sprinkle over fruit. Bake at 400 degrees for 35 to 40 minutes. Delicious ... and adds a wonderful cinnamony aroma to the air!

    Soo good. My first made spark recipe! I love the soft nectarines on top, and the cinnimon makes the room smell amazing. The only fault is that I'm always tempted to sneak more than one serving! -- Delicious - 9/29/09

    Very Good
    I subbed in some whole wheat flour to up the fiber and it was really good - not to mention it smells delish while baking! - 7/15/10
