Introduction

My mom made these every holiday. We would wake up and she would have them fresh out of the oven. I make them much smaller than she did, but they are just as delicious! Ingredients

    5 cups flour
    3 packets years
    .5 cups sugar
    1.5 tsp salt
    1 cup butter
    3 large eggs
    Lemon peel from 1 lemon
    Jam or Preserves about 1/4 tsp per cookie
    Powder sugar if desired
    1.5 cup milk

Directions

Scald milk and add butter and sugar. When cool add yeast. Add to dry ingredients and add beaten egg. I use a Kitchen Aid mixer to get the dough ready for kneading, but before a had that I just mixed in a bowl. Add extra flour as needed to form soft dough. Cover and let rise til double in bulk. Take out of bowl and cut in half. Roll first half and cut with small round cookie cutter. Repeat with second half. Place cookies on cookie sheets and cover until they rise again. Indent with thumb and add small amount of fruit filling. Heat at 350 degrees for 15 minutes, but check after about 12 minutes to make sure they are browning. Do not over cook. I add a little extra filling and dust with powder sugar if desired.

    can you tell me what weight of yeast .... it comes in jars of granuels here in New Zealand and I don't know how much is in one of your packets. Thanks - 11/6/09
