Apricot Glazed Pork Chops

Ingredients
1 lb boneless pork loin, sliced into 4 chops3 TBS Apricot preserves4 TBS coarse ground mustard2 TBS Extra virgin olive oil
Directions
In a medium skillet, heat oil over medium high heat, add pork chops and begin to brown. Turn chops and brown the other side, reduce heat to medium, cover. In a small bowl, whisk together the preserves and the mustard. You can also add a little garlic powder for extra or different flavor. Pour mixture over chops and allow meat to cook through, turning occassionally. Spoon sauce over chops when serving.
