Homemade Chili Seasoning Mix.2 tbsp all-purpose flour2 tbsp dried onions3 tsp chili powder1 tsp salt sense (low sodium salt)1 tsp crushed dried red pepper1 tsp dried minced garlic1 tsp splenda (sugar substitute)1 tsp ground cuminStew1 lb extra lean ground beef 1 small onion, chopped1 cup chopped green pepper2 – 16 oz diced tomatoes, undrained1 – 16 oz diced tomatoes with green chilies, undrained2 – 16 oz can mixed vegetables, undrained1 – 15 oz can kidney beans, undrained**above Chili seasoning Mix (or 2 – envelopes chili seasoning mix
Combine first 8 ingredients (listed under Seasoning Mix) in a small bowl until evenly distributed. Set aside. Crumble ground beef into large 4-quart microwave safe dish. Add onions and green pepper. MICROWAVE (high), uncovered 5 minutes or until meat is no longer pink. Stir and repeat if necessary. Drain and rinse meat mixture under hot water and return to microwave dish. Add diced tomatoes, vegetables, beans and mix in **seasoning mix, stirring lightly. Cover tightly with lid. MICROWAVE (high) 12 minutes or until mixture boils and flavors are well blended, stirring once.
This can be made ahead and put into crock pot on warm or low to serve later.
