3 Bean Vegan Chili

1 T olive oil1/2 large onion, chopped1 large pepper, chopped (poblano or bell, whichever you prefer)4 cloves garlic1 T chili powder1 T paprika1 t cumin1 t coriander1 28 oz. can tomato sauce1/3 C tomato paste1 can black beans (15.5 oz)1 can red kidney beans (15.5 oz)1 can pinto beans (15.5 oz)salt and black pepper to taste
In dutch oven or large sauce pan, warm oil. Add onion and green pepper. Cook until onions are clear. Add minced or pressed garlic, chili powder, paprika, cumin, coriander and salt. Stir until vegetables are coated and continue to cook for 2 minutes. Add beans, tomato sauce and tomato paste. Cook on medium-low for 15-20 minutes until heated through or pour into crock pot and simmer all day.
Serving suggestions: Serve with a dollop or reduced fat sour cream or sprinkle a little cheddar cheese on top. It's also great over pasta as a chili-mac.

My favorite chili now!!!! It is so good. I added chopped zucchini and some cayenne pepper powder and 1 jalapeno. YUM this was my first time making chili and I can say its better than my moms chili. i added a pound of ground turkey.Its a very hearty chili. add rotel instead of tomatoes. - 6/15/10
