Chicken in Creamy Feta Sauce

1 lb Chicken Thighs2 tbsp Balsamic Vinegar0.5 tsp ground Thyme2 tsp Olive Oil1 tbsp plus 1.5 tsp all-purpose Flour0.5 tsp ground Oregano1 c fat-free milk0.33 c. feta cheese (I use Kraft feta in a bag)1 tsp lemon juice
Sprinkle vinegar and thyme over the chicken. In a large, nonstick pan heat oil. Cook chicken until cooked through and browned on both sides. Remove chicken and keep warm.
Sprinkle flour and oregano over the pan juices, stirring constantly until blended. Gradually whisk in the milk. Continue whisking until mixture is thick and heated through. Stir in cheese and lemon juice. Reduce heat and simmer until the cheese melts. Pour sauce over the chicken and serve immediately.
