Black Bean Soup, Vegetarian (Good Housekeeping)

1 Tbsp vegetable oil1 medium onion, finely chopped2 garlic cloves, crushed2 tsp chili powder1 tsp ground cumin1/4 tsp crushed red pepper2 cans black beans, rinsed and drained1 can vegetable broth2 cups water1/2 cup loosely packed cilantro, choppedlime wedges
Makes 1-1/2 cups
Heat oil until hot. Add onion, cook until tender. Stir in garlic, chili, cumin, and pepper. After 30 seconds, stir in beans, broth, and water; heat to boiling. Simmer uncovered 15 minutes.
Spoon half of mixture into blender. Purée until almost smooth. Pour into bowl and do same with other half.
Return to pot to heat and sprinkle with cilantro. Serve with lime wedges.
