Veal Patties with Gravy

Ingredients
1 lb. ground veal1 Tbsp. butter1 minced onion1 tsp. salt1/2 tsp ground pepper1 Tbsp fresh minced parsley (or 2 tsp. dried)2 tsp. fresh lemon juice (about 1/2 lemon)1/4 cup dry Italian bread crumbs1 Tbsp. catsup2 Tbsp. low fat milk1 egg1 cup beef broth1/2 cup red wine
Directions
Melt butter and saute onion until golden brown. Combine onions with remaining ingredients, using hands to mix thoroughly. Form into 4 equal sized patties, about 3/4" thick. Heat 1 Tbsp. olive oil in large skillet. Brown patties over medium heat until cooked thoroughly, turning once. Remove and keep warm. In same skillet, add 2 Tbsp. flour and cook for a minute or two to brown. Slowly add beef broth and wine, mixing over medium low heat until thickened. Add veal patties and serve. Makes 4 servings.

    I had ground veal in freezer and had no idea what to do with it. This was great - my patties even broke apart and I'm not big on gravy when it comes anything other than poultry. And my husband says it's good for leftovers on Tuesday. - 1/22/12
