4 medium apples, peeled, cored, and sliced into ¼ inch slices. 1 tablespoon walnut or other high-quality oil1 tablespoon lemon juice 1 tablespoon honey 2 teaspoons ground cinnamon 3 eggs 1/2 cup milk or soy milk 1/2 cup whole-wheat flour
Preheat the oven to 375 F.
Pour the walnut oil into a 10-inch pie pan and spread to cover bottom.
Pour the lemon juice, honey, and 1 teaspoon of the cinnamon over the apples and mix.
In a medium-size bowl beat the eggs well.
Add the milk or soy milk.
Combine the whole-wheat flour and the cinnamon.
Add the whole-wheat mixture to the egg mixture and stir to form a batter.
Pour the batter into the oiled pie pan.
Place the apple slices on top of the batter, covering the surface. (The apples will sink into the batter.)
Bake at 375 F for 30 minutes or until the batter is firm and the apples are cooked.
Divide into 12 equal parts; serve!
