Spinach Chicken Stromboli

Ingredients
1 can spinach (low sodium if available)1 can artichoke hearts1 can sliced mushrooms1 pkg chicken breast (approx 14oz)18oz reduced fat Mozzarella3 tubes Pilsbury pizza crust
Directions
Cut chicken into 1" cubes

Drain canned veggies well

In a deep non-stick pan, combine chicken, spinach, artichoke and mushrooms...NO OIL OR BUTTER...the veggies have enough moisture to prevent burning....and sautee over medium heat until chicken is cooked through and excess liquid almost completely evaporates.

While preheating oven to 425 line baking sheet with non-stick foil or parchment paper

Unroll pizza crust and layer in the middle: 3oz cheese, 1/3 chicken/veggie mix, 3 oz cheese. Fold crust over top and pinch until completely sealed. Place pinched side down on baking sheet and repeat twice more.

Bake until crust is golden brown, or crispier if you like. Cool 5 min before cutting and serving. 3 stromboli will make approximately 12 servings.
