per serving:1 3-4 oz. chicken breast, skin and fat removed. cooked and diced1/2 cup seedless grapes, cut in half1/4 cup post grape-nuts cereal1 tbsp. kraft fat free salad dressing or mayo1 packet of splenda (or other sugar substitute)
note: this recipe is for a single serving. I use it for an easy lunch to pack and assemble just before eating so the grape nuts dont get soggy.
boil boneless, skinless chicken breast (remove all fat). cool and then cut into bite sized. (best if chilled before eating but not necessary) place in bowl.
cut grapes in half and add to bowl with chicken bites. add grape nuts to bowl.
combine fat free mayo or salad dressing with splenda. mix together. add to bowl and stir to lightly coat other ingredients.
