Refrigerator Buttermilk Bran Muffins

2 c. All-Bran1 c. Oat Bran1 c. boiling waterDates (optional)1/2 c. butter3/4 c. to 1 1/2 c. Sugar (may decrease)1 egg2 c. buttermilk2 1/2 c. flour2 1/2 t. baking soda1/2 t salt
Mix together Bran cereal and Oat Bran in a large bowl. Mix in one cup of boiling water. Let cool. Cream together butter and sugar. Add egg and mix into cool bran mixture. Mix together dry ingredients and alternate adding the dry ingredients and the buttermilk stirring just until moistened. Bake @ 400 degrees in a preheated oven for 20 minutes. Makes 24-30 regular size muffins and batter can be kept in the refrigerator for up to a month.
