Sweet and Sour Thai Noodle Bowls (Rachael Ray)

salt1 lb. whole wheat spaghetti3 T vegetable oil3/4 lb. chicken thinly sliced2 leeks1 1/2 c. mushrooms thinly sliced3 cloves garlic finely chopped2 inches of ginger root1/3 c Tamari2 T honey1-2 limeshot sauce, to taste (not included)2 cups shredded iceberg lettucecilantro or basil (optional)
Cook pasta after salting and boiling pot of water. As pasta is cooking heat oil in skillet over high heat and cook chicken. Remove chicken and place on plate. Add mushrooms and leeks to the skillet and stir-fry 2 minutes. Add garlic and ginger, and cooke a minute more. Stir in Tamari, honey, lime zest and juice. In large serving bowl toss veggies with meat, noodles, and lettuce to combine. (May add hot sauce, cilantro, basil, and /or life slices~optional.)
