Quinoa Melange Salad

Ingredients
1 cup quinoa1/2 cup pickled beets (with a bit of beet juice), chopped1 cup artichoke hearts, chopped2 handfuls of cilantro, minced2 cups spinach1 medium tomato diced4 tbsp balsamic vinegar
Directions
Soak quinoa in water for 15 minutes before cooking. After soaking is complete, place on high until boiling then simmer for 15 minutes. Flush with fork and place in the fridge to cool for approx 30 minutes. While quinoa is cooling, chop up beets, artichoke hearts, cilantro, tomato and spinach, place in bowl with a bit of the pickled beet juice and balsamic vinegar to marinate. When quinoa is cooled, mix in with the rest of the ingredients.
