Chicken Curry Caserole

Ingredients
1 can of Cream of Chicken Soup, condensed.5 cup mayonnaise.5 Tbsp lemon juice1 Tbsp curry powder (adjust for taste preference)2 boneless, skinless chicken breasts, cooked and diced1 package (10 oz) frozen, mixed vegetables (any combination works; carrots, broccoli and cauliflower are good choice).5 cup cheddar cheese, shredded.5 cup saltine crackers, crushed
Directions
Combine soup, mayonnaise, lemon juice and curry powder until well blended. Mix in chicken and vegetables. Transfer into a casserole dish. Top with cheese and crackers. Bake at 375 until vegetables are hot (30-45 min)
