Ham Potato Bake

Ingredients

1 3/4 cup water2/3 cup milk5 tbls butter1/2 tsp salt2 2/3 cups mashed potato flakes1 cup sour cream1 cup shredded cheddar cheese2 cups sliced/diced ham1 cup shredded monterey jack or colby/montery jack cheese2 tbls dry bread crumbs
1. In large pan bring water, milk and 4 tbls butter and salt to a boil. Remove from heat; stir in potato flakes. Let stand for 30 seconds or until liquid is absorbed. Whip with fork until fluffy. Stir in sour cream and cheddar cheese.
2. Spoon 1/2 potato mixture into greased 2 quart baking dish. Top with ham and remaining potatoes. Sprinkle with Monterey Jack or Colby-Monterey Jack cheese.
3. Melt remaining butter and toss with bread crumbs. Sprinkle over top.
4. Bake uncovered at 350 degrees for 30-35 minutes until heated thru and brown edges.
Can substitute ham with smoked sausage.
