Spinach Mushroom Delight

1 tablespoon olive oil1/2 medium onion - finely chopped3 minced garlic cloves4 cups fresh mushrooms, sliced2 10-12oz packages prewashed baby spinach or 2 bunches spinach, rinsed, with stems removed5 oz extra sharp white Vermont cheddar cheese1/8 cup Progresso breadcrumbs (Garlic or Italian)
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
2. Saute onion and garlic until tenter. Add mushrooms and saute until slightly soft. Add fresh ground pepper to taste.
3. Meanwhile, microwave spinach for 2 minutes. (If you washed the spinach, or are substituting frozen spinach, be sure to remove as much excess water as possible!) Place in prepared baking dish and top with onion mushroom mixture. Sprinkle cheese evenly over top, and breadcrumbs over the top of the cheese.
4. Bake in preheated oven for 20 minutes.
Let cool for 5 minutes before scooping out with a spatula or spoon. Also good cold out of the tupperware the next day! :)
