Date Squares

Ingredients
Directions
I cup pitted chopped dates1/3 cup granulated sugar1 1/2 cups water2 cups regular rolled oats2 cups white flour1 cup packed brown sugar2 sticks unsalted butter melted
Place first three ingredients in a saucepan and simmer for 20 minutes until dates have formed a thick puree. Leave to cool completely
Place remaining ingredients in a large mixing bowl and mix well to form a crumbly mixture
Preheat oven to 350 F and line a 9X13 inch baking tray with foil and spray with cooking spray.
Press half to 3/4 of the oat mixture onto the tray, spread over date mixture, and then sprinkle over the remaining oat mixture.
Bake in oven for 30 - 40 mins until golden brown and the date mixture appears set.
Remove from oven and cool completely on a cooling rack (use foil to lift out of baking tray) about 2 hrs
Once cooled then cut into 36 equal size pieces and enjoy!
Keeps in an airtight container for up to 1 week
