Fast egg breakfast sandwiches

Ingredients

5 large eggs.25 cup of skim milk5 medium mushrooms2 large slices of onion1Tbsp of EVOOPam cooking spray
- Pre heat oven to 350 F
- Heat medium pan with the 1 Tbsp of EVOO and add the chopped mushrooms and onions, cook to desired tenderness
- In a bowl mix the eggs with the milk, I add Montreal steak spice for flavour
- Spray 6 holes on the muffin tin with the Pam Cooking spray
- Once mushrooms and onions are cooked add to the muffin tin
- Add eggs to the mushrooms in the tin
- bake until cooked through and golden brown on top
