2 cups cubed Papaya1can(15 z) rinsed and drained black beans1medium avacado, peeled and cubed1 cup frozen corn,thawed1/2 cup golden raisins2 serrano peppers , seeded and diced1/4 cup minced fresh cilantro1/4 cup orange juiceJuice of 1 lime1 TBSP cider vinegar2 Garlic cloves minced2 tsp ground ancho chili pepper, divided1/4 tsp salt1/4 tsp sugar2 corn tortillas cut into strips
In a large bowl ,combine Papaya,beans,avacado,corn,raisins,peppers, cilantro, orange juice, lime juice, vinegar, garlic , sugar, salt and 1/2 the ancho.
Cut the tortilla into strips and place on a bakin sheet coated
with cooking spray.Sprinkle with remaining Ancho and bake
at 350 for 8-10 minutes or till crisp sere with salad
