Trisha's Skinny Vegetable Soup

1 15 oz can Broth of choice (Vegetable, Beef or Chicken)2 cups Low Sodium V-81 Qt Water1 can Kidney Beans1 onion chopped2 med carrots chopped2 med carrots sliced1/2 large stalk celery chopped1/2 large stalk celery sliced2 sm/med zucchini sliced then quartered1 Tbsp Olive OilItalian SeasoningSalt & Pepper
Saute chopped carrots, celery and onion in olive oil until softened. Add broth of choice (vegetable broth for a VEGETARIAN soup), V-8 and water. Add remaining ingredients. Bring to a medium boil then reduce to a simmer. Cook for 60-120 minutes. Vegetables will be al dente at 60 minutes and soft at 120. I cook as long as I have time for. Serve with parmesan cheese if desired.
