1 can light coconut milk1 package Thai red curry paste (or 50 grams)1 medium onion chopped1.5 cups broccoli chopped1 medium apple chopped1 red pepper sliced10 baby carrots cut in half length wise2 tbsp. low sodium ketchupgarlic to tasteparsley as garnish
heat coconut milk on med low heat for one minute, add spice paste heat for 1 more minute.
Add vegetables and ketchup, simmer for 8-12 minutes or until vegetables are tender crisp.
garnish with parsley.
Serve over rice if desired.
