Tofu and Veggie Stir Fry with Peanut Butter

Ingredients
170 Grams Tofu - (half the block)1.5 Medium Onion 2 Red Peppers3 Cups Mushrooms0.5 Tbsp Extra Virgin Olive Oil2 Tsp Soy sauce (low sodium if possible)2 Tbsp Peanut Butter
Directions
Cut Tofu as desired
Cut Vegetables as desired

Heat EVOO in non-stick pan, put in all vegetable and stir fry until soft mix in Tofu soy sauce and Peanut Butter, add about 2 TBSP of water so everything gets incorporated evenly.

Stir Fry all ingredients for 5 mins or until everything is cooked to your prefrence.
