Pumpkin Pudding or Spread

Ingredients
1 Cup canned pumpkin2 oz neufchatel cheese2 Tbsp brown sugar, packed
Directions
Soften cheese in microwave for 15 seconds or so. Stir all ingredients together and chill for at least an hour, or overnight.

It soft-sets in the fridge. Can be spread over English muffin with peanut butter, or eaten with a spoon, like pudding.

A sweet way to get in 2 fruit servings, some protein and fiber.

Makes about 1 1/4 cup.
