Indian Inspired Lentils

Ingredients
1 cup dry lentils2 Tbsp salted butter1/8 tsp ground ginger1/4 tsp minced garlic2 tsp. garam masala1/4 c. skim milk
Directions
Boil lentils until tender as per package directions (usually about 20-30 min). Drain lentils and set aside. Combine butter, ginger, garlic, and garam masala in pan, stir until butter is melted. Add milk. Return lentils to pan. Mash if desired, or stir until thoroughly mixed. Makes 4 servings. Normally you would add whole milk and much more butter to lentils to make Indian lentil soup. This is a healthier and tasty version that makes a great side to fish, poultry, or other vegetarian dishes.

    I found this recipe a little bland, but I added some imli chutney (tamarind), mustard, spicy masala and cilantro and it was more to my taste. I enjoy very spicy food, so those of you that want just a little kick, this recipe is very good. - 1/25/08
