Chicken Marsala

Ingredients
1/8 tsp black pepper1/4 tsp salt1/4 C flour4 Chicken breasts, boned, skinless (5 oz)1 tbs olive oil1/2 C Marsala wine (or most any red wine)1/2 C low fat chicken stock1/2 lemon - fresh juice1 C sliced mushrooms (or more)1 tbs fresh parsley, chopped
Directions
Makes 4 servings with 1 breast & 1/3 C sauce

1. Mix together pepper, salt, & flour. Coat chicken.
2. In a heavy bottomed skillet, heat oil. Place chicken breasts in skillet and brown on both sides. Then remove chicken from skillet and set aside.
3. To the skillet, add wine and stir until heated. Add lemon juice, stock, and mushrooms. Stir to toss, reduce heat, and cook for about 10 minutes until the sauce is partially reduced.
4. Return browned chicken breasts to skillet. Spoon sauce over the chicken.
5. Cover and cook for about 5 - 10 minutes or until chickenis done.
6. Serve sauce over chicken. Garhish with chopped parsley.

    I made this tonight and liked it very much! The next time I make it, however, I think I will reduce the thickness of the chicken with a meat mallet. - 4/6/09

    Good, but next time I will add 1 cup of wine instead of 1/2 cup because the sauce needed to be sweeter and more of it to have enough for the chicken. - 6/19/08
