Chicken Parmesan

4 boneless, skinless chicken breasts, trimmed of fat1 egg, beaten1/3 c. mozzarella, shredded, 1/3 c. parmesan cheese, shredded, divided 3/4 c. Italian Bread Crumbs2 tbls. olive oil, divided1 1/2 c. spaghetti sauce
Trim fat from chicken, then cut each breast into strips. I like to cut each breast into 10 pieces so that one serving is 5 pieces. I also prefer to cut the chicken breasts cross wise to get shorter, thicker pieces.
In a cereal size bowl mix bread crumbs with 3 tbls. of the parmesan. In another bowl beat the egg; season with salt, pepper, and Italian Seasoning if desired.
Heat your largest skillet on med/high and spray well with cooking spray before pouring in 1 tbls olive oil (half because you typically have to do this process half the chicken pieces at a time). Heat the oil.
Dip each piece of chicken in the egg wash and then the bread crumbs mixture before placing in the heated oil. Cook on both sides of strip just long enough to turn golden brown. Remove from skillet and set on plate with paper towels to absorb excess oil. Repeat with remaining chicken.
Spray a 9x13 pan with cooking spray. Lightly coat the bottom with some of the spaghetti sauce, set aside remainder. Place the breaded chicken pieces in the pan, trying not to overlap but place in snug together. Pour over the remaining sauce and top with the remaining parmesan and mozzarella cheese.
Cover the pan with foil and cook in a preheated 400 degree oven for 30 minutes. Remove the foil and bake for another 5 minutes to melt all the cheese. Serve hot!
