Ingredients
1 cup wheat flour1/4 cup Flour1 1/4 tsp. Baking powder1/2 tsp. Baking soda1/2 tsp. Cinnamon1/8 tsp. Salt2 slightly beating Egg Whites1 cup mashed Banana (2-3 bananas)1/2 cup sugar1/4 cup oil
Directions
Preheat oven to 350 degrees.
In a medium bowl stir together FLOUR, BAKING SODA, BAKING POWDER, CINNAMON, & SALT.

In a large bowl stir together EGG WHITES, BANANA, SUGAR, & OIL.

Mix flour mixture into banana mixture just till moistened.

Spray 3 mini loaf pans or a 8x4x2 inch loaf pan with nonstick spray. Spread batter in pan. Bake for 40-45 mins or until a toothpick comes out clean

Makes 18 servings.

    This bread tasted a little too "wheaty" for my husband and I which overwhelmed the banana flavor. It was a little dry, but good with some butter. This made my kitchen smell delicious, though! - 8/4/10
