Red Potato salad amazing!

20 small red potatoes5 large eggs4 stalks celery6 baby sweet Gherkins4 green onions (Scallions)1 tsp salt or to taste1 tsp Black pepper1 TBL mustard1 3.8 oz sliced black olives(optional)
wash & trim (if needed) 20 small red potatoes boil w/ eggs until potatoes are fork tender, allow to cool. In a large bowl rough chop potatoes & peeled eggs. Mince (I used my food chopper) onions, celery, sweet pickles. Add remaining ingredients and smash together, I use my manual potato masher to mix well and get a creamy/chunky texture. You could toss if you prefer. Makes 10 cups or 20, 1/2 cup servings. Great for a BBQ or Pot luck.
