Spicy Lemon Chicken

1/3 cup water1/4 cup lemon juice1 T olive oil1 t onion powder1/2 t garlic powder1/2 t chili powder1/2 t paprika1/2 t ground ginger1/4 t pepper4 - 4 oz. boneless, skinless chicken breasts4-1/2 t cornstarch4-1/2 t cold waterHot cooked noodles or riceChopped fresh parsley, optional
In a greased (nonstick spray) slow cooker, combine the water, lemon juice, oil, and seasonings. Add chicken; turn to coat. Cover and cook on low for 4-5 hours or until a meat thermometer reads 170 degrees. Remove chicken and keep warm.
In a sauce pan, combine the cornstarch and cold water until smooth. Gradually add the cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken over noodles/rice. Sprinkle with parsley if desired.

LOSTINAYARN
This is almost exactly the same as the Spicy Crockpot Chicken recipe I found years ago, except instead of onion powder we use a chopped onion. Other alternatives to put it over include couscous and sauteed squash ribbons. I also like to include some steamed or sauteed veggies on top with the sauce. - 9/1/11
