1 pkg Whole wheat pasta - I used Hodgson Mill Veggie Rotini3 tbsp olive oil3 tbsp red wine vinegar (or balsamic depending on your taste)5 cloves of garlic chopped - or add to taste1/2 large yellow onion1 large pealed and chopped cucumber2 medium chopped tomatoes1 chopped bell pepper - I use yellow/red/orange1 tsp dried oregano1 cup shaved or shredded parmesan (optional)
